Derived from the Spanish word “tapar” which means to cover, tapas is the name of a wide variety of appetizers or bite-size food assortments designed to encourage conversation because people are not so focused on eating an entire meal that is set before them.
When dining at Lolo Dad’s Brasserie, however, tapas not only encourage conversation but are the culinary conversation pieces themselves. Choose from the restaurant’s wide variety of tapas:
Crispy deep-fried prawn head
A straightforward, generous serving of prawn head fritters with a thin coat of flour and cornstarch cooked with salt, pepper and lemon. Comes with wine and vinegar dip sprinkled with garlic and chalots – a culinary improvement from a seemingly traditional way of cooking prawn heads.
Smoked salmon on egg Tartar toast
Fresh salmon on very thin slices of focaccia topped with micro arugula. A foamy mixture called sabayon rests between the egg tartar and the salmon, then topped with bits of crouton.
Grilled flat bread with three dips
Grilled pizza dough with three dips on the side, including marinated eggplant puree, chick pea (garbanzos) puree with olive oil and relish of tomato and cucumber. So Mediterranean yet uniquely Lolo Dad’s.
Gratinated mussels
When it comes to shellfish, the Philippines is big on mussels, and they don’t get any more appetizing in Makati than at Lolo Dad’s. Luscious mussels tossed in their own juice then topped with wilted romaine lettuce and parmesan cheese, sitting on rock salt. Mouth-watering indeed.
Roast beef with chilled Anchovy Hollandaise
Sumptuous roast beef folded with chilled anchovy Hollandaise and garnished with orange wedges, and then finished off with balsamic syrup. A food experience found only at this restaurant.
Mixed mushrooms vol au Vent
Shiitake and button mushrooms have never cooked like this in any restaurant in the Philippines. Glazed with tomato oil, the tempting mushrooms sit on puff pastry and topped with crispy basil. Food for the gastronomic artist, here you go.
Potato Tortilla with Chorizo and crispy Pancetta
