LUXURY IS CREATIVITY
“The creativity comes naturally.” This is what the brilliant Chef Ariel Manuel shares with us one afternoon at Lolo Dad’s Brasserie in Makati. Since 2008, this cozy dining enclave has been serving upgraded comfort food where luxury is not in the price, but rather in the choice of ingredients and how they are played up in spectacular combinations.
To say that Chef Ariel Manuel is a respected and lauded figure in the industry is an understatement. Short of completing his architecture degree, Chef Manuel left the landscape of blueprints to enter a different arena: the kitchen. He honed his craft working at different luxury hotels in Manila, opening his own Lolo Dad’s Cafe in Manila in 2000, and acing a spree of local and international culinary contests along the way. Now he looks back in gratitude by way of giving the chefs he trains ample space to express their creativity. “The chefs are very creative, and we’re not rigid here. They can create whatever they want. I guide them in terms of presentation and combination,” says Chef Manuel.
